Nykteri by Mikra Thira is a different interpretation of this traditional Santorni white wine style. Its name is derived from the word ‘night’. According to local tradition, the grapes are to be picked before sunrise and pressed overnight.
Late-picked grapes of three indigenous varieties, Assyrtiko, Aidani and Athiri, are co-fermented in stainless steel tanks but the fermentation process is completed in French oak barrels in which the wine continues to rest on its lees for 4 months to gain structure and weight. It is bottled and then reductively matured in the cellar for at least one year.
The wine is lemon blond in colour. Its mineral backbone coming from the Assyrtiko variety matches perfectly with the softness and fruitiness from the Athiri and Aidani grapes respectively.
On the palate, this is an explosive dry white with that well-known long saline-infused, mineral finish that typifies the wines the Theraic land brings forth.
The wine is best served chilled at 13°C and will age well for 8 to 10 years.
