Its reputation once extended far beyond the island, reaching across the Mediterranean and as far as Russia. The wine\u2019s very name reflects its origin, having evolved from Vino di Santorini to Vino Santo and ultimately&nbsp;Vinsanto.&nbsp;<\/p>\n\n\n\n<p>The wine is crafted from grapes grown on old,&nbsp;ungrafted&nbsp;Assyrtiko (95%) and Aidani (5%) vines which are cultivated in volcanic soils of pumice, ash, and siliceous rock. After&nbsp;harvest, the grape bunches are naturally sun-dried for 7\u201310 days&nbsp;to concentrate sugars, acidity and aromas. Fermentation is slow, followed by ageing for eight years in oak barrels.&nbsp;<\/p>\n\n\n\n<p>The wine shows a deep amber&nbsp;colour. On the nose, aromas of dried fruit,&nbsp;honey&nbsp;and sweet spices dominate. The palate is rich and velvety, yet perfectly balanced and defined by a long, silky finish.&nbsp;<\/p>\n\n\n\n<p>Serve at 9\u201311\u00b0C.
