A dessert wine that rewards patience
Vinsanto is the most historic wine of Santorini with a documented presence that dates back to the 18th century. Its reputation once extended far beyond the island, reaching across the Mediterranean and as far as Russia. The wine’s very name reflects its origin, having evolved from Vino di Santorini to Vino Santo and ultimately Vinsanto.
The wine is crafted from grapes grown on old, ungrafted Assyrtiko (95%) and Aidani (5%) vines which are cultivated in volcanic soils of pumice, ash, and siliceous rock. After harvest, the grape bunches are naturally sun-dried for 7–10 days to concentrate sugars, acidity and aromas. Fermentation is slow, followed by ageing for eight years in oak barrels.
The wine shows a deep amber colour. On the nose, aromas of dried fruit, honey and sweet spices dominate. The palate is rich and velvety, yet perfectly balanced and defined by a long, silky finish.
Serve at 9–11°C. The wine can age indefinitely in the bottle.
Due to its limited production, it is available exclusively in Therassia and Santorini.
